This category of menu items was developed to assist individuals with conditions such as a wheat allergy or gluten intolerance, which is also referred to as gluten-sensitive enteropathy, celiac disease, or non-tropical sprue.
Gluten is a protein component of some grains. For people with gluten intolerance, eating gluten damages the intestinal lining, compromising the absorption of many other nutrients. Besides wheat-rye, oats, barley, spelt, triticale and kamut also contain gluten. To manage gluten intolerance, it is important to avoid these and any foods made from them.
