Expansion: Taco Del Mar to Open 100 New Restaurants Through 2007 Seattle-based Taco Del Mar, an independent quick-casual Mexican restaurant chain operating 260 restaurants, continues to grow through franchisees. The company's latest master developer has pledged to grow throughout Indiana and the Louisville, KY area. The master developer already has eight store sites tagged for opening. The average Taco Del Mar ranges 1,200 to 1,500 square feet. The company has been travelling the country in the last few months with a branded RV recruiting franchisees. It plans to open 100 new restaurants over the next 10 years
