Will a surf-themed fresh Mexican restaurant chain called Taco Del Mar play in Indiana? A couple of entrepreneurs — from Seattle, no less — are willing to find out. Their Baja-inspired company, Rolling in the Midwest, LLC — whose slogan is "Delicious is our middle name" — is searching for franchisees for its quick casual chain in Columbus, Evansville, Lafayette, Indianapolis' Westside and Terre Haute. No opening date was set for the restaurants, but if you already are hankering for a mojito burrito, get in your car or on a plane. The nearest U.S. location to Indianapolis is Knoxville, Tenn., 290 miles away. There also are two locations in Canada. — Tom Spalding
