Fast Mexican food is quickly making its mark in this city. Panchero's Mexican restaurant is on target to open on July 31 in Bismarck at Pinehurst Square Shopping Center. Scott Majkrzak bought into the Panchero's Mexican Grill franchise for Grand Forks, Bismarck, Fargo and Moorhead, Minn., and will be opening the first in Bismarck in Pinehurst near the Starbucks at the end of this month. CRYSTAL R. RI-ID The 2,281-square-foot "fast food fresh" Mexican restaurant will employ about 20 to 25 people. Keeping to tlie Mexican food news, Taco Del Mar has becotne so popular that the owners may be opening another location, franchise owner Pat Engelhardt said. Engelhardt said they will disclose more details by the end of the montli.
